The amount of semolina can vary, generally requiring 150-200 grams, depending on the size of the eggs. Additionally, to make the dumplings fluffy, we add half a teaspoon of baking soda. This will help the dumplings rise during cooking.
Once we have a homogeneous mixture, we let the mixture 'rest' for about 5 minutes. This resting period is essential as it allows the semolina to absorb moisture and swell, resulting in fluffier dumplings.
Once the vegetables in the soup are cooked and the flavors have blended nicely, we are ready to add the dumplings. We use a teaspoon to take portions of the dumpling mixture and carefully place them in the soup, ensuring they are evenly distributed. We cover the pot with a lid and let the dumplings simmer on low heat. It is important not to lift the lid too often, as the steam helps cook the dumplings evenly.
After about 10-15 minutes, the dumplings should be fluffy and cooked. We can check them with a fork; if it goes in easily, they are ready. When we consider they are perfectly cooked, we turn off the heat and add finely chopped fresh parsley for an extra touch of flavor and freshness.
