Green beans
The kitchen is a magical place where simple ingredients transform into delicious dishes, and the recipe we will explore today is one of those comfort foods that remind us of family meals. We will prepare a vegetable stew with green beans, which is not only nutritious but also full of enticing flavors. Let's get to work!
The first step in preparing this recipe is to ensure we have all the ingredients at hand. You will need: one medium onion, two bell peppers (preferably one red and one green for a more vibrant look), one large tomato, a few cloves of garlic, about 300-400 grams of fresh or frozen green beans, salt, pepper, and of course, a bunch of fresh parsley.
After gathering our ingredients, let's start preparing the vegetables. Peel the onion and chop it finely into small cubes. The bell peppers should be seeded and sliced into thin strips, known as julienne. The tomato is cut into larger cubes to provide a pleasant texture to the dish, and the garlic is minced to enhance the flavors.
In a large skillet or pot, add a tablespoon of olive oil and place it over medium heat. When the oil is hot, add the chopped onion and bell peppers. Sprinkle a little salt, which will help release the juices from the vegetables and soften them faster. Sauté the vegetables for about 5-7 minutes, stirring occasionally, until the onion becomes translucent and the bell peppers start to soften.
If the vegetables are ready, add the diced tomato and minced garlic. These ingredients will bring an extra freshness and a perfect taste to the dish. Continue to cook the mixture for a few minutes until the tomatoes begin to break down and form a delicious sauce.
The next step is to add the green beans. If you are using fresh green beans, make sure they are washed and trimmed at the ends. If you are using frozen beans, there is no need to thaw them before adding. After you have added the beans, add two cups of water and let everything boil. Initially, cover the pot with a lid to speed up the cooking process. After about 15-20 minutes, check the consistency of the vegetables and the water. If the water has reduced significantly, remove the lid and let it boil for a few minutes to thicken the sauce.
Finally, when the beans are cooked and the vegetables are soft and flavorful, add the chopped parsley. This will not only add a touch of freshness but will also enrich the colors of the dish. Don't forget to season with pepper to taste. Mix everything well and let the dish cook for a few more minutes so that the flavors combine perfectly.
This vegetable stew with green beans is served hot, perfect alongside a slice of fresh bread or as a side dish for a main course. It is an easy-to-make recipe, healthy and full of vitamins, which will surely be appreciated by all your loved ones. Enjoy your meal!
