Leek is a versatile ingredient that can transform any ordinary meal into a special one. This leek and meat recipe is not only simple but also full of flavors, perfect for a comforting dinner. Here’s how to prepare it step by step.
We start by preparing the leek. Choose a fresh leek with green leaves and a firm stalk. Remove any damaged parts and wash it well under cold running water to remove any impurities. After washing, cut the leek into pieces about 1-1.5 cm thick. These pieces will add a crunchy texture to our dish.
Once the leek is cut, we turn our attention to a large pot where we bring water to a boil. Add a tablespoon of salt to the water, and when it reaches boiling point, add the leek pieces. Let the leek boil for two minutes, just enough to blanch it, thus keeping its vibrant color and nutrients.
In the meantime, we take care of the onion. Take a large onion, peel it, and chop it finely into scales. In a deep frying pan, heat a little oil and add the chopped onion. Sauté over medium heat, stirring constantly until it becomes translucent and releases its flavors. Now it’s time to add the meat cut into cubes, preferably pork or beef, depending on your preference. Add a teaspoon of seasoning to enhance the flavors, and let the meat brown slightly.
After the meat starts to fry, pour a glass of water into the pan and cover with a lid. Let everything simmer over medium heat so that the meat becomes tender. This is an essential step, as the steam will help cook the meat evenly.
After about 10 minutes, add the tomato paste. This will add a rich taste and a beautiful color to our dish. Mix well to integrate all the ingredients and let it simmer together for another 10 minutes. The aroma that will fill the kitchen during this time is simply irresistible!
After this time, take the blanched leek and add it to the pan, stirring carefully to ensure it combines well with the meat and sauce. It is important to add water to cover the leek by about two fingers. This step ensures that all the ingredients will cook evenly, and the leek will become tender and flavorful.
Let everything simmer on low heat, covering the pan with a lid to allow the steam to work. Finally, when the water has reduced to about a finger's width, taste the dish and add salt and pepper to taste, adjusting the seasonings according to personal preferences.
Once the dish is ready, it can be served hot alongside a side of polenta or a fresh salad. This combination will make the meal truly special. Enjoy your meal!
