If you want to save time, you can use a food processor to achieve a fine texture, but chopping it finely with a knife remains an excellent option as it will allow you to control the degree of chopping.

In a non-stick skillet, add a tablespoon of olive oil or butter to achieve a rich flavor. Sauté the onion over medium heat, stirring occasionally to prevent burning. When the onion becomes transparent and starts to take on a slightly golden hue, it’s time to add your favorite spices. You can use salt, pepper, sweet paprika, or even herbs like oregano or thyme. These will add extra flavor and complexity to the dish.

Once the spices are well mixed with the onion, it’s time to add the mushrooms. Choose fresh mushrooms, such as champignon or porcini, which you will carefully clean and wash under cold running water. Slice the mushrooms thinly or cube them, depending on your preferences. Add the mushrooms to the skillet and continue cooking the mixture, stirring occasionally, until the mushrooms soften and release their juices.

Once you have an aromatic mixture of onion and mushrooms, it’s time to add the wet ingredients. Crack a few eggs into a bowl, add a pinch of salt, and beat them lightly with a fork. The eggs will help bind the ingredients and provide a fluffy texture to your dish. Add the eggs to the skillet and mix well so that they combine evenly with the onion and mushrooms.

To bind all the ingredients, gradually add the flour, stirring continuously to avoid lumps. The flour will help achieve a consistent texture, and the dish will be easy to cut after baking. You can adjust the amount of flour depending on the desired consistency; you should aim for a batter slightly thicker than pancake batter.

Before putting the mixture in the oven, prepare a baking tray. Grease it with butter or oil and sprinkle a thin layer of flour to prevent sticking. This is an important step as it will ensure that your dish will come out easily once it’s done.

Pour the mixture into the prepared tray and level the surface with a spatula. Preheat the oven to 180 degrees Celsius and place the tray in the oven. Let the dish bake for about 25-30 minutes or until the edges become golden and slightly crispy.
